Tomato & Mango Salsa
Made entirely from fresh ingedients, this salsa makes deliciously healthy dipping option.
Ingredients
Serves 4
- 4 plum tomatoes
- 1 green chilli, deseeded
- 1/2 red onion
- 1/2 mango
- 2 tbsp finely chopped coriander
- Juice of 1 lime
- 1 tsp white vinegar
- Salt and freshly ground black pepper

Method
- Halve the tomatoes and carefully peel off the skins, scoop out the seeds with a dessert spoon and chop into tiny cubes. Place in a bowl.
- Finely dice the chilli, onion and mango and add to the tomatoes.
- Add the lime juice, coriander and seasoning, and mix thoroughly.
- Refrigerate for 1 hour before serving.
